Steak reimagined - integrated, not isolated
Most people serve steak with sides. This recipe flips that thinking: the beef becomes part of the salad, sliced into strips and tossed through warm vegetables, bitter greens, and a sharp sherry vinaigrette. Every bite delivers protein, fat, carbohydrate, and vegetable together.
Ingredients (1 serving)
Protein source
200g grass-fed ribeye steak (~45g protein)
Carbohydrate sources
80g potato, sliced into thin strips
80g butternut squash, sliced into thin strips
1 small shallot, sliced lengthwise
Vegetables & salad
1 head baby gem / romaine heart, leaves separated
1 small endive (Belgian), sliced lengthwise
50g China rose radish (or regular radish), thinly sliced
Herbs
Fresh parsley, roughly chopped
Fresh chives, finely sliced
Fresh thyme (optional, for cooking)
Dressing
2 tbsp extra virgin olive oil
1 tbsp sherry vinegar (or red wine vinegar)
Salt and freshly ground black pepper
Method
1. Prep the vegetables Slice potato and butternut into thin strips (matchstick size). Slice shallot lengthwise. The key: uniform thickness so everything cooks at the same rate and integrates into the salad.
2. Blanch the vegetables Bring a pot of lightly salted water to boil. Add potato, butternut, and shallot. Blanch for 45–60 seconds—they should be just tender but still have bite. Drain immediately and rinse under cold water to stop cooking. Set aside.
3. Cook the steak Season ribeye generously with salt and pepper. Heat a pan over high heat. Add a little oil. Sear the steak for 2–3 minutes per side for medium-rare (adjust to preference). The marbled fat will render and help create the crust. Rest for 5 minutes before slicing.
Start hot to seal, then reduce heat to finish gently. The goal: caramelised exterior, pink interior.
4. Prep the salad components Slice endive lengthwise into strips. Separate romaine leaves. Slice radish paper thin. Roughly chop parsley and chives.
5. Make the dressing Combine olive oil and sherry vinegar in the bottom of a large bowl. Season with salt and pepper. Whisk briefly.
6. Assemble Add blanched vegetables, salad leaves, radish, and herbs to the dressing. Toss thoroughly— everything should be lightly coated. Slice the rested steak against the grain into strips. Add to the salad and toss gently so the beef gets dressed too. Taste. Adjust salt and pepper.
7. Plate Pile onto a plate. Ensure beef strips are visible on top. Finish with a final crack of black pepper and a drizzle of olive oil if desired.

The Science Behind the Plate
Grass-fed beef has a different fat profile. Animals that eat grass (instead of grain) produce meat with more omega-3 fatty acids, more conjugated linoleic acid (CLA), and higher levels of fat-soluble vitamins A and D.
The fat is actually nutritious—don't trim it.
Butternut squash is lower-carb than it looks. Despite the sweetness, it has roughly half the carbohydrate density of potato. Combined, they give you starch plus fiber plus flavour without excessive glucose load.
Bitter greens aid digestion. Endive contains compounds that stimulate bile production—helping your body break down and absorb the fats in this dish. Bitter isn't a flaw. It's functional.
Blanched and cooled = resistant starch. The quick blanch followed by cold water begins the starch-to-fiber conversion. Not as dramatic as overnight cooling, but still beneficial.
Connective tissue is nutrition. The sinew and fat in ribeye contain collagen—the protein your joints, skin, and gut lining are made of. Eat the whole slice.

Less active: reduce potato to 50g, increase leafy greens
Training day: increase potato to 120g
Budget option: use hanger steak, flank, or even minced beef
Use what you have:
Any bitter green works: radicchio, frisée, watercress
Swap butternut for roasted beetroot or parsnip
No sherry vinegar? Red wine vinegar or balsamic works

On Grass-Fed Beef

The catch: You can't eat ribeye every night on a grass-fed budget. Learn to use the whole animal—brisket, cheeks, shanks, oxtail. These cuts are cheaper, often more flavourful, and just as nutritious. They simply require longer cooking.
